I'm planning the process as well... refresh the panel, add back the glove boxes, and upgrade the avionics. I'm still determining if I can strip and repaint the existing panel ... or if I need to replace it with a new Univair blank panel.
Would be interested to know if anyone could recommend a shop to punch the avionic cut-outs, paint the panel, and add placards / labels.
... also wondering about the FAA approval / documents required.

I just bought a 415-C and I too wish to completely replace my instrument panel using that Univair blank panel and upgrade my instrument package to new technology.  I'm reopening this email string and asking if anyone has experience with the new Univair panel you mention.

I'm thinking about redoing my instrument panel using the blank panel Univair sells. Is anybody familiar with this product or the FAA Field Approval process that's required for it?

Thanks!
