I found an almost simple method, I can map out a flight with Skyvector, export it as an FPL then Convert it with an FPL to KML file converter then load it into Google Earth. I also found a Google Earth overlay that gives all of the US Airspaces including Restricted, Warning, MOA, Danger, National Parks, etc. (No TFR) and importing the .KML gives me my flight path in red that I can then view the elevation with the Elevation tool. A bit kludgey but it works. Below is a quick down and dirty map I cobbled together from Wikepedia maps into one to give me a general idea of the Interstates. I use that with Skyvector to get the initial rough path. I'll see if I can get the Google Earth Airspace Overlay URL from my history and post it with the Converter URL.

I've done I-40 and I-80 with no issues. Take the usual mountain/desert flying precautions.

Good flyways through the rockies? was created by Mac McCormick
Scouring the wild wild web for flyways through the Rockies from New England, not much luck except for following 4 different interstates, I-40, I-70, I-80 & I-90. Anyone have flyways for crossing the Rockies in a 'Coupe?
