I did this a year and a half ago. Univair (or better yet, call Vernon Gregory at 803-360-2061) to get all the parts you need.
First, you need a F48138 "Ercoupe Gauge Cover" replacement lens . This is just plastic with a convex surface and 12 holes for the screws, and unfortunately, they're really proud of it (i.e. its silly expensive.)
Second, you need three new cork gaskets, with the same 12 holes to match. I don't have the part number for these but Vernon has them.
Third, get some Permatex Form-a-Gasket #3 , the non-hardening formula. You'll paint a very thin layer on each side of all three cork gaskets about 10 minutes before you're ready to reassemble the whole thing. My brand new installation was done "dry" and it would seep a bit of fuel around the edges. I tightened it as much as I dared to without improvement, so I took the whole thing apart again and reassembled with Permatex #3. It hasn't leaked a drop since then.
You can probably reuse the gauge assembly, the metal ring (topmost component, and the twelve screws... but if any of yours are looking bad just get Vernon to add them to the order. It's all very cheap compared to the new lens!
Remove the 12 screws, then pull the whole thing out - ideally without dropping anything into the fuel tank. Clean off all the surfaces (some MEK is very useful) and then reassemble. Tighten the screws a bit at a time in a "lug nut" style pattern until they're all good and snug but not heavily torqued down... you don't want to crack that new lens and the Permatex will do its job with just a reasonable amount of force.

Here's what mine looked like BEFORE the new lens. I also stripped & repainted the top ring and screw heads and it looks great now.
